Chicken Balls

Made from Turkey breast.
-1 full turkey breast cut into ¾ inch chunks
-1 ½ cups flour
-1/2 cup corn meal
-1 teaspoon curry powder substitute 1 teaspoon poultry seasoning for curry powder if you don’t like curry.
-2 teaspoons lemon pepper
-1 teaspoon garlic powder
-1 table spoon dill
-1 tablespoon baking powder

Make sure Turkey cubes are dried on cloth or paper towel before you begin.
Mix all dry ingredients together and stir in approx 2 cups of water. You want to make a batter that’s about the consistency of a thick yogurt.
Dip in turkey chunks one by one and drop into hot oil in deep frier. You can do this in a hot pot of oil on the stove but be very, very careful not to spill oil. Trust me on this one your insurance rates WILL go up!
Cook until golden brown. Drain on paper towel to remove a bit of the excess oil. You can make extra and freeze these also. Just warm them up in the microwave or oven if you want them a bit crispier..

For even crunchier balls once you have battered the turkey roll in breadcrumbs before you fry and drain them on paper towels when done.
